Preparation and Cooking Directions:
- In a large skillet or saucepan heat your extra virgin olive oil on medium-high heat, once hot add bell peppers, onions and garlic.
- Cook till golden brown, Mix in the rice, chicken broth, parsley, salt, pepper and jalapenos.
- Combine ingredients well. Pour rice mixture into a large 2-3 quart baking dish.
- Preheat oven to 350 degrees and bake covered for 40-45 minutes.
- Fluff with a fork serve with green pasta. This rice dish is best served and eaten with chopsticks
